    When you make a loaf of no-knead bread with cheese, what type of cheese do you use?


    For taste, I like Jim’s original suggestion, pecorino Toscano. however, that means the total cost of a loaf is around $16, which is a lot. I have been experimenting a little, and a hard, aged Gouda is my favorite so far, in the $6 per loaf price range.



    Fontina worked very well. I might even give it an edge over the pecorino Toscano.
